We had Thanksgiving early with FI’s family this weekend. I brought the desserts and this year I made some pumpkin spice macarons with pumpkin cream cheese filling. They  diidn’t even makee it to dinner! Everyone was raving about them. I’m going to mmake them again for my family’s Thanksgiving this week but I’m going to double the recipe, lol

We celebrate Turducken with my friends: basically the weekend before Thanksgiving we have a giant pot luck where everyone brings a dish.  We’ve had it ever since college, and the food is always AMAZING.  And, of course, we all eat turducken until we burst.  This year we had 75 people show.  Prior years we’ve had up to 130, but we’ve been scaling it back as that tends to be too much for one household.

We have competitions and I have two dishes that have been repeat winners.  Pumpkin lasagna and cream puffs.

For the lasagna, I start with this:http://allrecipes.com/recipe/roasted-butternut-squash-and-garlic-lasagna/

But I use a fresh sugar pumpkin.  I use shallots instead of garlic and add shavings of fresh nutmeg (the flavor gets stronger as it cooks so don’t be heavy handed).  Finally, I roll out my own lasagna noodles from scratch which makes this shine.

For the cream puffs: I use a basic recipe for the shells. For the filling, I use vanilla pudding and whipping cream (subbed for milk using the directions on the box) and beat the heck out of it.  I dunk the lids in melted dark chocolate and sprinkle lightly with sea salt.

I don’t cook for holidays (though I’m sure I will in the future) but the dishes that scream holiday and everyone loves would be my mom’s baked mac&cheese, my dad’s cornbread, cranberry, and sausage stuffing, and homemade rolls. We don’t really have these things throughout the year other than Thanksgiving, Christmas, and Easter. Of course there are several other famous dishes, but these are some of the favorites.

My turkey.  It is seriously delicious.

Also I do a 7 layer magic bar dessert that is such a huge hit, I had to hide somefor my kids for left overs last night because they were going like hot cakes.

I make a pistachio fudge bundt cake that my mom came up with. It’s famous among our family and friends. It’s a pistachio & almond cake batter. You basically make a loose fudge, mix it in half the batter and swirl the two batters together. Top with more fudge. It’s the moistest cake ever.
