I’m not sure what is typical for toasts. It seems like they tend to be early, but since our dinner is starting so late anyway, I don’t want to hold things up. I’m thinking about having dad say his bit while folks eat their salad (the champagne will go nicely with that). The caterer had scheduled it for after dinner, before cake. Is that typical?

We’re doing the toasts exactly when you said, while everyone is eating their salads before the main course is served. That’s how I’ve always seen it done and how we want it to be done for our wedding as well.

we also had a late dinner, and had the main toasts in between the salad and entree courses

You didn’t have an option for what we did. Ours was after everyone was seated for dinner, but before the food. We did toasts, then our first dance, then dinner, then cake, then the hora, then opened the dance floor.
