    I live in Ireland(Waterford) July is normally good weather wise – this year was awful, im hoping next July will be better as we get married then too!!!

     

    There are so many different counties you can visit in Ireland, you could fly into Cork or Shannon and go up the west coast(Killarney/Galway) or fly into dublin (do the guinness tour)and go down the east coast. Waterford is in the south east. Check out Waterford Castle hotel-its beautiful, on its own private island that you take a ferry to get to it 🙂

    AdkRCLove:  To address some of the issues you raise w/r/t Tuscany: truffles won’t be a major feature on menus, as the classic truffle season is traditionally September/October/possibly into November.  Mushrooms will appear on some dishes, but you should easily be able to find dishes that don’t have them.  I love Tuscany, but July/August is my absolute least favorite time to visit because it is quite hot and there are many tourists.  Bugs can be a real issue in Florence and other river cities, but in towns with some elevation they aren’t usually an issue. 

    Also, Italy is no more a pickpockets’ haven than France, Spain, or countless other countries.

    AdkRCLove:  It is possible to have summer truffles, but the white truffles, which are the really big deal, are an autumn thing.  I rarely see any mention of truffle on a summer menu in Tuscany.  

    I’ve been in Tuscany for parts of four of the last five summers and three of those times there were temps in the mid-90s and up for days at a time (this summer was particularly bad, as much of Europe was in the grip of a terrible heatwave–it was 95+ for 10 straight days where I was).  To be honest, I don’t think a pool would have helped much.
