Boiling it will cause the marrow to come right out, and it will end up in your boiling water instead. Marrow becomes a fluid once again when it is heated. Definitely roast it like PPs said, with just some sea salt and pepper and eat it on toast. YUM 

The best marrow is in the long bones, and it’s perfectly acceptable to ask the butcher at the meat counter, or if you have a local slaughterhouse you can get them straight from there at a cheaper cost than at the store.

Glad I caught this post. My uncle raises cows for beef and every year Darling Husband and I get fresh meat from 1/3 of one of his cows. I have quite a few packets of ‘soup bones’ in the back of my freezer that I never know what to do with. I just can’t make that much soup! I’m gonna try roasting them. Thanks ladies!
