My mom and I are debating about the vegetable side dish for my sister’s reception dinner.
The caterer’s standard offering is green beans cooked in smoked turkey. I suggested to my sister that creamed spinach might be more interesting.
Reasoning: although I like green beans fine and dandy, I hate banquet green beans 90% of the time. They’re bland, dry, and uninteresting.
My mom says that “not enough people like spinach,” and that these green beans won’t be dry because they’re cooked in turkey. That’s nice and all, but I’ve never met a person who doesn’t like creamed spinach (vegans aside)!!!

I would rather have the green beans- plain. I like most everything, but sometimes caterers get carried away thinking everything has to be flavored with something else or mixed with a cream sauce.
If you do the beans with turkey, that rules it out for any vegetarians.

I like spinach, my husband likes spinach…. more people might like the green beans though, I don’t know. Maybe you should ask a few of the guests what they would prefer?

I think green beans are hard to cook perfectly, especially in a big batch. They end up being limp and a funny shade of brownish green or they are undercooked and crunchy. I think creamed spinach has a lower rate of failure so practically speaking, I think that’s a better choice.

I would choose the spinach just for the vegetarian factor- at least one side dish not cooked with meat, just in case!

if its for vegetarians there can’t b turkey but I’d prefer string beans… Cream spinach is very chancey since it has a vry distinct taste u either luv it or hate it

Creamed spinach! I had the most amazing creamed spinach at Keens Steakhouse in NYC recently. It really won me over 🙂

The thought of creamed spinach makes me cringe… def green beans! Although potatoes would be my #1 pick if it was an option.

I have never had creamed spinach. The string beans get my vote.

As several other posters have mentioned, it makes it quite hard on vegetarians when caterers put meat in vegetables! That makes it very hard at these types of functions when, sometimes, all you’re left with are vegetables!
Just something to consider.

@kariebee43: This. As a vegetarian, I was pretty peeved when I confirmed with my waitress at Texas Roadhouse that my meal was going to be meat free, and she informed me the baked potatoes are rolled in bacon fat. Even if you don’t have many vegetarians, maybe exclude the turkey part of the green beans? I’d imagine a caterer would be able to still make decent green beans (I’d hope!). I’m def all about the creamed spinach, but it couldn’t hurt to consider other veggies or alter the green beans. I think they’re pretty well accepted lol

I voted creamed spinach because the thought of turkey in my beans grosses me out! How about just plain buttery beans?
