You are in charge of taking down all that so I would ask someone to help, a mom or friend and talk to your caterer what he will do with anything left on the tables he is clearing. 

Then ask your caterer about when it can be picked up (next day) or if it has to be gone that night.

You have to check with your venue. Some places will hold your personal items until the next day, others may have another event to set up for and require you take them with you the night of.  The easiest way is to assign some of the wedding party to take care of it- for example Mom and Dad load the gifts in their car, Maid/Matron of Honor grabs table numbers and guest book and bridesmaid A gets the vases.

Definitely assign it to someone to take stuff home that night. The venue staff would (or at least could) assume anything left behind is rubbish. We wanted to leave for our honeymoon, so my family did the packing up, which mainly meant taking home the gifts. I wasn’t there but I think it was only a couple of trips to the car(s). The only other thing I really wanted to keep was my bouquet and I gave that to my sister before I left.

We are.  And I know family and friends will pitch in.  We have to take everything we brought in with us.  Caterers will clean off tables and take linens. I need to finalize the clean up of the centerpieces with my florist though.  Not sure how that works.  The vases are hers and so maybe we will bring them all to her the next day or not sure if she would come get them the same night.
