congrats on your menu choices.  I agree, I have mexian food all the time, smart to go with something different.

We had our final tasting today – menu finalized.  Isn’t such a stress reliever? !

PS. So many bakers say they can do fondant and I have honestly NEVER liked it.  But it is beautiful, and if you love it then people can push it off the cake if they feel so strongly about it.

yum yum yum.  I love your cake inspiration too. I  would think the baker could do the actual frosting with buttercream and do the piping around the edges with fondant along with the little flowers .  If you dont like fondant, you can always ask if that is possible.  Plus red velvet typically has cream cheese frosting, not fondant.

you should ask them if they can do marshmallow fondant- i hear it tastes a bit better

Do you like buttercream?  Thats a good one thats longer lasting than whipped cream.  Especially if you will be outside, you should stick with buttercream not whipped cream.  Fondant will sweat when its hot and get little beads on it.  Buttercream can melt but not as quickly as whipped cream.
