If you know that everyone in your group will eat beef or pork, go for it. I’m a beef lover and I would love that beef dish! I never get chicken at weddings.
But if you don’t know that everyone is a beef and pork lover, you need a chicken or at least a pasta option.
Out of all of our guests, only one is a vegetarian. But I wouldn’t offer only beef and pork b/c I know a lot of people that strongly prefer chicken.

we know 99% of the people coming – only about 2-3 people have a “plus one” so those are our unknowns. (and frankly i dont want to change the menu for just 2-3 people out of 120 – i know it sounds bad but i dont know those people and im not baseing my entire menu on what they MAY or may not like….)
so i will stick with what i know 🙂

I think you are right. Tailoring your menu to your actual guests is the best approach. And as I mentioned, the food looks very good, so you are in great shape. Even your sides sound awesome, I can’t imagine that you’ll get more than one or two people raising an issue.

Sounds yummy to me, but I love both pork and beef! Well, I love all meats! 🙂 I would definately get the beef though-sounds delicious!

I may be in the minority but I don’t consider pork to be ‘white meat’ in the same way chicken is white meat. It has a beefy texture!
I would add a veggie option if I were you – even non vegetarians might want to pick a less meaty entree. I agree with other posters though – keep guests in mind, but it’s only one meal – your guests won’t starve if one or two don’t like your choices. Personally, i’d eat either of those meals!

I would have worked it out to create another chicken option – most people, even without religious upbringing, might not like pork and having only beef as the other option, you may have some unhappy diners. But at the end of the day, it’s your wedding…
