See if your baker allows for an anniversary cake topper. Mine included a fresh cake topper on our anniversary. Trouble was we forgot about it. Oops. If not try to get a new one made on your anniversary or got back and get some anniversary cupcakes made. The idea of year old frozen cake just sounds Yucky! We finished our cake when we got back from the honeymoon.

Our bakery made us a free jumbo cupcake for our first anniversary because they said frozen cake is gross and no one should eat it.

Keeping some of the wedding cake is an old tradition from the time when wedidng cale was fruit cake well preserved in rum or brandy. That is no longer the case. I wouldn’t eat anything that was in the freezer for a year.

Eat it.  Then come your one year anniversary get the same baker to make you a smaller cake of your original cake.

rockclimberbride :  we had traditional dark English fruitcake as our wedding topper and the second tier of our four tier cake. Our baker put in sh*tloads of brandy so it would preserve well. Traditional fruitcake lasts a few years if made properly. We ate our second  tier at our first anniversary and our topper at our second anniversary. We didn’t freeze it because you don’t have to with traditional fruit cake with proper Royal icing. It tasted great even two years on! (But even the cellophane packed light fruit cake you buy from the supermarkets here have an 18 month use by date so I’m not surprised really especially as ours was generously steeped with brandy and rum)

I didn’t know if a regular caje would taste great after being frozen for a year but if you like fruitcake you could consider going with that if you really want to adhere to tradition. If not bring it with you on your wedding night and cut into it and enjoy some then. I was starving by the time we got to our hotel and my hubby had thoughtfully taken a few slices of our cake in the cake bags we’d supplied for guests and we had a chsmpagme and cup of tea and cake and enjoyed the view from our hotel balcony before doing other stuff! 😜
