We love fajitas. This time of year we make our own marinade from herbs from our garden (usually lime and cilantro) and cook the meat (steak for him and chicken for me) and veggies  (onions and peppers) on the grill. I add some black beans to mine and Darling Husband adds cheese to his. Plus it makes enough left overs for 3-4 additional meals for each of us.

healthy… this is going to sound odd but I mix 3 egg white, 1 whole egg, all naturalpeanut butter on a low carb tortilla and sprinkle with cinnamon, tons of protein and healthy fats!

I make black bean burritos. I can of black beans, 1 can of tomatos with green chilies, 1 can of corn and peppers, lime juice, and Penzey’s salsa seasoning simmered untill the excess liquid is gone. It makes enough burrito filling for a couple meals, and I don’t feel too bad filling up on beans and veggies.

@Charliejeorge:  My “go-to” semi healthy meal is pad thai! Love it!!!! 🙂

Okay more realistically…

Salad with sides of fish (usually salmon) and rice or quinoa (usually make something cool, like tonight I made rice with walnuts, cranberries, orange juice instead of water, cinnamon, oregano, and coriander… mmmmm!!!!! in my fave vegan recipe book Blissful Bites, I’m not vegan but lactose intolerant so it makes cooking much easier!)

I’m currently hooked on Greek yogurt. I add fresh strawberries, or grapefruit and walnuts if I don’t have any strawberries. I went through a brief avocado phase a couple of weeks ago, but I can’t eat a whole one at a time, and they go bad before I get them all eaten.

My unhealthy meal is anything with bacon. I looooooooooove bacon!

Veggie stir fry on cous cous for my healthy meals. Super easy to make.

I also make a taco soup with turkey and quinoa which my fiance flips over. He eats like 4 bowls. It takes seriously 30 minutes to make.

Unhealthy? Anything southern. I love fried chicken tenders in butter crisco. I also love chicken wings tossed in ranch powder and olive oil and baked until crispy. My little brother loves when I cook like that.

My go to healthy meal is cabbage and turkey stir fry. You make it with sesame oil, so it is very, very flavorful.

My go-to not so healthy meal is typically pizza or tacos, lol.

Tacos with ground turkey. Super simple and easy to make and they take, like, 15 minutes from start to finish.
